QUARTER 3 NEWSLETTER – 2025

RESIDENT QUESTIONS

SAFETY: There have been some recent concerns about safety. A car was stolen this quarter, and another resident had their car broken into, and had items stolen. One resident asked if anyone would be interested a joining a neighborhood watch. If anyone is interested, please reply to this email.

SOCIAL CLUBS: A neighbor asked if there would be interest in starting resident social clubs – such as a book club, crafting club, a board game meet up, or even a poker night. If you are interested in participating (or leading) a group, please reply to this email to let us know so we can send you invitations. The first month will be crochet beach bags at the Kofoed house at 9217 Augusta Ct – (this is great for beginners) the cost for the kit is $12.99 on amazon (currently on sale), and you get all supplies needed. Get it here! Order your kit online (have it on hand before the social club meeting), and reply to this email to RSVP! Snacks provided, BYOB. We will meet Saturday, August 16th at 7 pm.

WILDLIFE SIGHTINGS

You may have noticed that some of our resident Muscovy ducks have laid eggs and have a nest at our community pond (her nest is by the benches, close to the street). Camille did some research, and they need to sit on their eggs for 5 weeks, so we will have hatchlings around July 4th. Here’s a picture of dad wandering through the neighborhood, and mom tending to her eggs.

RESIDENT ENGAGEMENT EVENT

MOVIE NIGHT: Come join us at sunset on July 11th to enjoy a movie a (Lilo & Stitch) and luau party together, which will be projected on to the wall in Zone 2. The HOA will provide dinner, games, decorations, and a tent with chairs for the adult seating area. Bring picnic chairs, and drinks to enjoy/share, and don’t forget the bug spray!

RESIDENT SPOTLIGHT

Interviewer: Patricia Mattingly
Resident: Yesenia Perez (Yesi), HOA President

I’m married to Christian and have a daughter, Olivia. I have lived in Linkside at Baymeadows since 2018 and have lived in Jacksonville since 2008 (although I was born in Florida). I worked in a warehouse as a teenager stocking, then was a receptionist at an interior design firm. Later, I worked in a collection agency as an administrative assistant, where I was eventually promoted to payroll, and did that for 15 years. Now, my husband and I own a small business, “OCY solutions” where we do furniture assembly, handyman work, and wallpaper installation. We bought a house in this development because I used to drive through the neighborhood often, and fell in love with the houses, the way it was well-maintained, and the golf course (which was still here at that time). When I’m not working, I enjoy going to the beach, and my hobbies include painting, arts, and crafts – which I find relaxing. If I had a community wish list, I would like to see a picnic area where families can gather in a covered gazebo, or a community garden to grow vegetables. Pat: I would like to see gathering places for residents to enjoy, if it was possible to add it without increasing dues. Yesi: It might also make sense to reach out to our neighbors at Los Lagos to build a relationship that could be mutually beneficial, which I know used to exist in the past. I am excited about future plans to do a movie night in zone 2 for neighbors to enjoy in the summer and bring snacks and drinks to share. My favorite food is pizza (always a favorite since childhood). As President, my goal is to build a strong community bond. I intend to create that by providing a community garden, a picnic area, and offer monthly events. I’d like to encourage participation and help our neighbors feel included. I strive to create an atmosphere where everyone is connected, supported, and inspired to care for one another.

It’s all topped off with the classy wreath on their gated entrance. Thank you for showing pride of ownership, and inspiring us all to improve our own little slices of paradise in Linkside at Baymeadows!

RECIPE OF THE QUARTER: ZUPPA TOSCANA

Submitted by: Erin Kofoed

Ingredients

Original recipe yields 6 servings

  • 1 pound mild/spicy Italian sausage
  • 1 ¼ teaspoons crushed red pepper flakes
  • 1 large white/yellow onion, diced
  • 1 tablespoon minced garlic
  • 32 oz. chicken broth, and 1.5 cups water (use water as needed to cover potatoes fully)
  • 6 medium potatoes, thinly sliced (approx 1/8-1/4 inch rounds)
  • 1 cup heavy cream
  • 1 bunch fresh kale, ripped to approx 1-2 inches, with tough stems removed

STEP 1: Cook Italian sausage and red pepper flakes in a pot over medium-high heat until crumbly, browned, and no longer pink, 10 to 15 minutes. Drain and set aside.

STEP 2: Stir in onions and garlic; cook until onions are soft and translucent, about 5 minutes.

STEP 3: Stir in chicken broth and bring to a boil over high heat.

STEP 4: Add potatoes and simmer until fork tender, about 20 minutes.

STEP 5: Reduce heat to medium; stir in cream, cooked sausage, and kale.

STEP 6: Cook and stir until kale has wilted and sausage is warmed through (about 20-30 minutes)

STEP 7: Serve, add shredded parmesan cheese to the top for extra gooey flavor.

PET OF THE QUARTER

SCOOBY DORADO

Scooby was born on January of 2022, and was given to us by a friend of the family.

As a puppy, he was very quiet, timid and obedient.

Now in his teens, he is very energetic, he surely barks to ‘protect’ the house against about anything and anyone, from the delivery person that approaches the porch to the little squirrel that visits our small pergola.

He is very active around the block, his favorite buddy (apart from me) is a neighbor’s dog called Morgan, he sees him about every day and playfully wrestles with him over the grass and tells him doggy secrets.

He is also a sporty dog that catches the frisbee and runs like a daredevil while pulling my daughter on her skateboard.

He is definitely a good neighborhood dog, always willing to say hello to every passer-by and receive some caring pets.

We are very fortunate to have him as family.

Sincerely,

The Dorado Family
